Tiny but mighty! Microgreens is a term referring to tiny, edible greens grown from the seeds of vegetables and herbs.
Microgreens are at the second stage of a plant’s life, where roots establish themselves and the first leaves (called cotyledons) appear. Plants in the microgreen stage are typically at their peak of flavor intensity and have also had the opportunity to absorb trace elements and micro nutrients.
A study from the USDA’s Agricultural Research Service (ARS) found that, at equal weights, almost all of the microgreens contained four to forty times more nutrients than found in the mature leaves of the same plants.
